Update document custom metadata

Updates the document custom metadata by overriding it with those in the payload.
Internal metadata defined by OneSpan cannot be updated and will be ignored if included in the payload.

Metadata is stored as key-value pairs where keys are strings and values can be any JSON-serializable type.
